Garlic Butter Surf And Turf Skillet Recipe

- 2-8oz New York Strip Steaks- take out 20-30 minutes to rest at room temperature
- 1lb fresh/frozen-thawed shrimp
- 1lb fresh/frozen scallops
- 1-bunch of asparagus, ends trimmed
- 6-Tablespoons butter, divided
- Fresh minced thyme
- juice of one lemon
- old bay seafood seasoning
- salt pepper
- 1-cube unsalted butter, softened
- 4-garlic cloves, minced
- 2-Tablespoons thyme, minced
- 1-teaspoon lemon juice
- wax/parchment paper
DIRECTIONS:
- Make the compound butter: mix all ingredients in a bowl, stir to combine well and place on wax/parchment paper. Roll into a log and twist the ends to seal. Place in refrigerator to firm.
- Season steaks with salt and pepper and grill on BBQ 5-7 minutes per side to desired doneness. Remove from grill and cover with foil.
- Place 2 Tablespoons of butter in skillet on medium heat, and asparagus, season with salt and pepper and saute for 4-5 minutes, just until they begin to wilt. Remove from skillet and set aside.
- Add 2 Tablespoons of butter to same skillet and turn up to medium high heat. Add scallops and season with Old Bay Seasoning. Sear on each side for 2 minutes, until nice and golden brown around the edges. Turn down the heat and continue to cook 2-3 more minutes. Remove from skillet and set aside with asparagus.
- Add last 2 Tablespoons of butter to same skillet and add the shrimp. Season with Old Bay Seasoning and cook about 2-3 minutes per side. Remove skillet from heat.
- Add the steaks, asparagus and scallops back in.
- Place a moderate slice of the butter compound on top of the steaks and serve.
