Ingredients

  • 1 lb lean ground beef
  • 1 red bell pepper finely chopped
  • 1/2 teaspoon salt
  • 2 1/2 cups beef broth
  • 1/2 cup bbq sauce
  • 1 1/2 cups mini bow-tie pasta dry pasta, do not prepare
  • 1 cup frozen corn thawed
  • 1 1/2 cups shredded cheese I use colby-jack

Instructions

  1. In a 12-inch skillet pan, over medium-high heat, add ground beef, red bell pepper, and salt. Cook and crumble until beef is no longer pink. Drain.
  2. Add the beef broth, bbq sauce, and mini pasta noodles. Stir together making sure that all the noodles are covered in the beef broth. Bring to a boil. Once boiling, cover with lid and reduce heat to medium-low. Let cook for 15-18 minutes, or until the pasta is tender and most the liquid is absorbed.
  3. Add in corn and 1 cup of the cheese. Stir until combined. Top with the remaining 1/2 cup cheese and cover with the lid for a few minutes until the cheese has melted.
  4. Serve with green onions if wanted.
